Paleo Thai Style Rolled Omelet
- 1 tbsp. ghee
- 2 large organic eggs
- ½ tsp. fish sauce
- 1 tbsp. cilantro (chopped)
- 1 tbsp. scallion (chopped)
- squeeze of a lime
Combine eggs together in a mixing bowl. Add the fish sauce, cilantro, scallion, and squeeze the juice from the lime wedge then mix well.
Add ghee to skillet and place over a high heat. Pour in the egg mixture and let sit for about 20 seconds.
Now start jerking the skillet back towards you at about a 20 degree angle so the omelet starts to roll over itself. You want to keep jerking the pan until the omelet is just under half the size of the pan.
Once omelet is mostly cooked serve on a plate and enjoy.
