Quick and Easy Paleo Thai Style Rolled Omelet

We all know that eggs can get boring for breakfast. The problem in most cases is not having enough recipes to avoid bordom. Today I want to share this awesome Thai style rolled omelet, it’s one of my favorite egg recipes, and I never seem to get bored of eating it.

Thai style rolled omelet is very simple to make and Whole30-friendly which is an added bonus for those doing the whole30 program. Paleo Thai Style Rolled Omelet

Ingredients

  • 1 tbsp. ghee
  • 2 large organic eggs
  • ½ tsp. fish sauce
  • 1 tbsp. cilantro (chopped)
  • 1 tbsp. scallion (chopped)
  • squeeze of a lime

Instructions

Combine eggs together in a mixing bowl. Add the fish sauce, cilantro, scallion, and squeeze the juice from the lime wedge then mix well.

Add ghee to skillet and place over a high heat. Pour in the egg mixture and let sit for about 20 seconds.

Now start jerking the skillet back towards you at about a 20 degree angle so the omelet starts to roll over itself. You want to keep jerking the pan until the omelet is just under half the size of the pan.

Once omelet is mostly cooked serve on a plate and enjoy.
