If you’re a paleo follower like myself then these paleo stuffed zucchini boats are a must try recipe. Zucchini is great vegetable to use, you can shred it, chop it, sprialize it or stuff it.
Paleo stuffed zucchini boats are a great option for a light yet satisfying weeknight meal. They are really simple to make and taste amazing. If your not strict paleo you can always top them with some cheese which makes them even better, although these taste great without it.
They are even kid-friendly as my two fussy kids absolutely dived in and enjoyed every bit of these. So what are you waiting for, cook these paleo stuffed zucchini boats and see for yourself how good they really are.
Paleo Stuffed Zucchini Boats
- 1 lbs. ground beef (grass fed)
- 2 large zucchini
- ½ cup cherry tomatoes (chopped)
- ¼ cup fresh basil (chopped)
- 1 cup mushrooms (chopped)
- ½ tsp. garlic (minced)
- 1 tsp. paprika
- 1 tsp. cumin
- 1 tbsp. olive oil
Pre-heat the oven to 375 degrees F.
Slice the zucchinis in half lengthwise and scrape out the inside. Put the zucchini insides aside. Place the zucchini shells on a baking tray and spray with olive oil. Sprinkle with pepper and place in a pre-heated oven for 10 minutes.
Meanwhile add beef to a non-stick skillet and place over a medium heat. Add paprika and cumin to the beef and mix well to coat all the meat. Once beef has browned add mushrooms, left over zucchini insides, tomatoes, basil, and garlic.
Give a good mix and then cover and let cook, remember to give mixture the occasional stir until all the vegetables are cooked.
Once zucchinis are ready remove from the oven and fill each one with the mixture. Place back in the oven for another 10-15 minutes. Serve and enjoy!
