Paleo Coconut Flour Chocolate Chip Cookies

Paleo Coconut Flour Chocolate Chip Cookies

  • 1/3 cup coconut flour (more if needed)
  • 2 whole eggs
  • 1/4 cup virgin coconut oil (melted)
  • 1/4 cup raw honey
  • 1 tsp. vanilla extract
  • Pinch of sea salt
  • 1/3 cup dark chocolate chips


Pre-heat the oven to 350 degrees F.

Grab a large mixing bowl and combine coconut flour, eggs, coconut oil, honey, vanilla extract and salt. Coat a baking tray with some coconut oil. Continue to mix until the mixture becomes a little doughy. Add the chocolate chips and fold them into the mixture.

Line a baking sheet with some baking paper and spoon the mixture on to the sheet in small ball shapes, you should get about 12 servings. Use a fork and gently push down on the mixture to make a cookie shape.

Place the cookies in the oven for 12-15 minutes depending on how well you want them cooked. Remove from the oven and let sit on a cooling rack for 10 minutes before serving. Enjoy!
