Grain Free Lemon and Blueberry Paleo Muffins
- 1/2 cup coconut flour
- 1/2 tsp. baking soda
- 1/2 tsp. sea salt
- 1/4 tsp. nutmeg
- 1/2 tsp. cinnamon
- 6 eggs
- 1/3 cup honey
- 1 tbsp. vanilla extract
- 1/4 cup coconut oil (melted)
- 1 cup blueberries
- zest from 1 lemon
Pre-heat your oven to 350 degrees F.
In a large bowl, combine eggs, honey, coconut oil and vanilla extract. Whisk everything together then add coconut flour, baking soda, sea salt, nutmeg and cinnamon. Mix until well combined.
Add the blueberries and lemon zest then gently mix with a spatula.
Coat a 12 cup muffin tray with some cooking spray. Pour the mixture evenly into each muffin hole then bake in the oven for 18 to 20 minutes. Test muffins by poking them with a toothpick. If the toothpick comes out clean then the muffins are ready. Enjoy!
