One of the best things about the paleo diet is experimenting with food. These flourless paleo brownies are made using zucchini, now this may sound a little strange but believe me it works, you really must try them to believe it.
Most people will most likely be put of by the thought of zucchini in brownies, but believe me they make an awesome treat. The zucchini creates a nice soft texture and you wouldn’t even know you was eating it. They are the perfect grain-free / gluten-free treat to satisfy your cravings.
Paleo baking can sometime be tricky, so be careful not to over cook the brownies. It’s important to remember, although these are way healthier than standard brownies, it doesn’t mean you should be eating them everyday, they are treats. But we all deserve a little treat now and again so enjoy them as a treat every once in a while.
Chocolate Flourless Paleo Brownies
- 2 cups zucchini (shredded)
- 1 cup almond butter
- 1 cup dark chocolate chips
- 1 large organic egg
- 1/3 cup raw honey
- 1/4 cup apple sauce
- 2 tsp. vanilla extract
- 3 tbsp. cocoa powder
- 1 tsp. baking powder
Pre-heat your oven to 350 degrees F.
Place all the ingredients into a food processor or blender and blend until well combined.
Coat a baking dish with cooking spray and pour in the brownie mixture. Place in the oven for 40-45 minutes.
Remove from the baking dish and let cool on a cooling rack. Once cooled cut into 10 servings and enjoy.
