Breakfast is one of the most important meal of the day. It gives your body the fuel it needs to get through the day, boosts your metabolism and also helps you lose weight. That’s why I decided to share one of my favorite breakfast recipes – chicken sausage and egg scramble.
I love egg scramble it’s quick and easy to cook, it’s healthy and super filling plus there are so many ways you can cook it. Egg whites are a high-quality source of protein and the yolks provide critical fats and micronutrients that benefit muscle growth, muscle strength, and aid fat loss.
However, eating eggs every single day can get very boring. That’s why I have lots of egg recipes to hand, so they don’t become unpalatable. Having plenty of recipes stops me from getting bored of eating the same ingredients. Egg meals are usually my favorite meal of the day. Share you favourite egg recipe in the comments below.
Southwestern Chicken Sausage and Egg Scramble
- 4 large organic eggs
- 2 chicken sausages cooked
- 1/4 tsp. cumin
- 1/4 tsp. paprika
- 1 small onion (diced)
- 1/4 cup yellow bell pepper (chopped)
- 1/4 cup red bell pepper (chopped)
- 1 handful spinach
- 1 tomato (chopped)
- Fresh cilantro to taste
- Sea salt and black pepper to taste
Coat a non-stick skillet with olive oil, add onions and peppers and cook for 2-3 minutes.
Once onions become translucent season them with salt and pepper. Add chicken sausages to the skillet cook for about 3-5 minutes.
Reduce the heat to low. Whisk the eggs together with the cumin and paprika then pour mixture into the skillet. When the eggs are set add the spinach and tomato and gently mix together. Top with cilntro and enjoy!
