Apple and Cinnamon Paleo Muffins
- 4 whole eggs
- 1/4 cup coconut oil (melted)
- 1 tsp. vanilla extract
- 1 cup applesauce (unsweetened)
- 1 tbsp. honey
- 1/2 cup coconut flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 2 tsp. cinnamon
- 1/4 tsp. sea salt
Start by pre-heating the oven to 350 degrees F, then prepare a muffin tray with some papper liners.
Grab a large mixing bowl and combine eggs, coconut oil, vanilla extract, applesauce, and honey. Mix well then add coconut flour, baking powder, baking soda, cinnamon and sea salt.
Using a spoon distribute the mixture into the lined miffin tins until they are about 2/3 of the way full.
Place in the oven and bake for about 15-20 minutes, or until a toothpick can be inserted into the center and comes out clean.
Let cool before serving. Enjoy
