Apple and Cinnamon Paleo Muffins Recipe

Lets face it! Sticking to a healthy diet 24/7 is not an easy task, but the truth is you don’t have to eat boring and bland food. Here is one of my favourite recipes for apple and cinnamon paleo muffins for when I have a sweet a tooth.

These apple and cinnamon muffins are fast and easy to make, and best of they they are good for you. Simply throw the ingredients together in a bowl and they are ready in less than 30 minutes. It is so easy to whip uup a batch of them, then you can leave them in the refrigerator and snack on them through the week. If you are in a rush simply grab one on your way out the door and you have a healthy breakfast on the go. You can also freeze them so they can last longer!

Be sure to whip yourself up a batch of these apple and cinnamon paleo muffins and get your week off to the right start! They are a simple, healthy and heart-friendly treat that the whole family can enjoy.


Apple and Cinnamon Paleo Muffins

Ingredients

  • 4 whole eggs
  • 1/4 cup coconut oil (melted)
  • 1 tsp. vanilla extract
  • 1 cup applesauce (unsweetened)
  • 1 tbsp. honey
  • 1/2 cup coconut flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/4 tsp. sea salt

Instructions

Start by pre-heating the oven to 350 degrees F, then prepare a muffin tray with some papper liners.

Grab a large mixing bowl and combine eggs, coconut oil, vanilla extract, applesauce, and honey. Mix well then add coconut flour, baking powder, baking soda, cinnamon and sea salt.

Using a spoon distribute the mixture into the lined miffin tins until they are about 2/3 of the way full.

Place in the oven and bake for about 15-20 minutes, or until a toothpick can be inserted into the center and comes out clean.

Let cool before serving. Enjoy
