This recipe makes 2 servings
12 oz. chicken breasts
Salt & Pepper
Pinch of cayenne pepper
¼ cup roasted, unsalted almonds
1 small garlic clove
4 tsp. extra-virgin olive oil
- Season chicken with salt, pepper and cayenne pepper.
- Cover a baking sheet with aluminium foil. In a blender or food processor combine almonds, garlic and oil until you get a coarse paste mixture.
- Place chicken on the baking sheet and top each beast with the mixture pressing down on it slightly to make sure it sticks.
Place in a pre-heated oven for 15 to 20 minutes at 425 degrees. Serve and enjoy!
