Almond Crusted Chicken


This recipe makes 2 servings

  • 12 oz. chicken breasts
  • Salt & Pepper
  • Pinch of cayenne pepper
  • ¼ cup roasted, unsalted almonds
  • 1 small garlic clove
  • 4 tsp. extra-virgin olive oil


  1. Season chicken with salt, pepper and cayenne pepper.
  2. Cover a baking sheet with aluminium foil. In a blender or food processor combine  almonds, garlic and oil until you get a coarse paste mixture.
  3. Place chicken on the baking sheet and top each beast with the mixture pressing down on it slightly to make sure it sticks.
    Place in a pre-heated oven for 15 to 20 minutes at 425 degrees. Serve and enjoy!
